Sometimes i don't.... I have built kites that i align the bias carefully and others that I just let it lay where it falls. Does it matter? yes. If you are going to build a kite that has real narrow tollerances, it matters more. If you are building a rok and you double fold and hem all the sides... it doesn't matter as much.
